Sharpham Elmhirst

Tasting notes

When eaten young (2-3 weeks) it has a delicate flavour with a light, moussy texture, developing a luxuriously rich, creamy and full bodied flavour when mature (4-6 weeks). Good with fresh or dried fruits such as figs.

History

The name ‘Elmhirst’ is the maiden name of Ruth Ash, who was instrumental in establishing cheese production at Sharpham in the early 1980s. Daughter of the social entrepreneurs Leonard and Dorothy Elmhirst of Dartington, she, along with husband Maurice Ash, established the Sharpham herd of Jersey cows in Essex in 1952.

Cheese making

Double cream is added to our jersey cow milk. The curd is only cut once then hand ladled and left to free drain in the moulds before turning. The cheeses are brined and turned daily for five days and then wrapped at ten days old. We despatch the cheeses at two or three weeks old. Shelf life is from 3-6 weeks after the day of production. The young Elmhirst is a completely different product to the mature cheese. So you can fill two gaps on the cheeseboard with one cheese. When fully ripe it can be quite a dramatic experience which will require a spoon! A great cheeseboard cheese, one of only two triple cream cheeses made in the UK.

Shelf Life

A full size cheese will have a maximum shelf life of 2 weeks from the date of dispatch. The smaller sizes have shorter life as they will ripen faster. The medium round or small squares will have a maximum of 12 days from date of dispatch. Please specify if there is a particular date on which you want to eat the cheese.
