Sharpham Ticklemore Goat 

The Sharpham Ticklemore Goat is a pasteurised, semi-hard goat milk cheese made with vegetable rennet. It’s named after a street in Totnes where the popular Country Cheeses Shop is located.

Available in 1kg or 1.5kg round cheeses. This cheese is handmade, so weights are approximate.

Tasting notes

The texture is moist and slightly crumbly with a delicious zesty, subtle lemon flavour. It can sometimes be soft just under the white, bloomy rind and has a beautiful, pure white body which contrasts with the golden yellow of our Jersey cows’ milk cheeses.

It is a brilliant match with figs, ripe pears, Medjool dates and beetroot. Particularly good in salads, it can be used anywhere melted cheese is needed in a recipe.

Cheese making

The goat milk that goes into Sharpham Ticklemore has been produced by Will and Su at Button Farm for over thirty years. It is a very attractive cheese and lovely to work with in the dairy. The shape and surface patterns from the moulds are unique. The freshly made cheese is drained in the cheese moulds for forty eight hours then hand salted and moved to a cool maturing room. Here it is turned regularly and the white bloomy mould is rubbed by hand weekly, thus forming the thin natural rind of the cheese. After three to four weeks, the cheese is wrapped and ready for dispatch. 

Shelf Life

A full size cheese will have a maximum shelf life of 1 month from the date of dispatch. The smaller sizes have shorter life as they will ripen faster. The medium or mini cheese will have a shelf life of 2-3 weeks from date of dispatch. Please specify if there is a particular date on which you want to eat the cheese.
