From the Sharpham Dairy

Starting in 1981 the 18th century coachyard of Sharpham House was home to our creamery where our range of hand made cheeses were produced. Using the rich milk from our organically farmed Jersey cattle and vegetarian rennet, our unpasteurised cheeses have been so well received that demand now far exceeds supply.

In April 2003 we moved into our new purpose-built creamery sited next to the winery. The building is modern and bigger, however the team still employ the same traditional techniques and the cheeses will remain fully hand-produced and free of GM ingredients. Visitors are able to view the process through windows as part of your visit.

Sharpham

'Sharpham' is a Coulommiers type Cheese which has been hand-made in the Creamery to our own recipe since 1980. Salt, starters cultures and vegetarian rennet are the only additions to fresh Jersey milk. 'Sharpham' is a mould ripened cheese with a unique flavour and creamy texture. Available in 1kg rounds, 500g rounds and 250g squares.

Sharpham Elmhirst

'Elmhirst' is a triple cream, mould ripened similar to a 'Vignotte'. It has a surprisingly light texture and delicate flavour if eaten young (2-3 weeks) but if matured for 4-6 weeks it becomes more rich and full bodied. 'Elmhirst' is available in 1kg rounds or 250g squares.

Sharpham Rustic

Available in plain or chive & garlic, the 'Rustic' is a semi-hard cheese which we mature for approximately 6-8 weeks, giving a youthful cheese with a moist, creamy texture. A thin natural rind forms during the maturation process. Available as 2kg cheeses.
